Rosemary Parmesan Popcorn

My husband loves popcorn. I mean he LOVES popcorn! Not that microwave B.S. that always leaves half the bag unpopped. He love the real deal, the buttered up 1100 calorie stuff that movie theaters sell. Half of the reason he loves movie theaters is the popcorn. When we walk into Target he sniffs the air to see if he can detect the siren smell of fresh popcorn. If we are at a carnival or farmers market, he will find the popcorn. It’s like a homing beacon for him.

This love of popcorn inspired him to go out and research the best methods for cooking popcorn at home. He really wanted to make it healthier because he knows that the 1100 calorie popcorn will eventually be the death of him (literally). So after a lot of reading, some Amazon purchasing and a few experiments later, he perfected the art of popcorn popping. I do not say this lightly folks. I do not like popcorn as a rule. It sticks in my teeth, it is way too salty and I feel gross after I eat it. You guys… my husband makes the perfect popcorn.

When I decided to make this blog I knew I had to feature this snack. It is low calorie, low fat and you can add all kinds of delicious flavors to it. This recipe is one of the first variations we tried on his original recipe. Try this recipe to impress your friends on your next movie night, or just make a batch for your next Netflix binge.

Tips:

The coconut oil really makes a difference health wise, just make sure you buy the refined, medium heat oil so you don’t get the coconut flavor or smell.

Flavacol is used in lieu of salt. It is high in sodium but you use significantly less butter and salt with this seasoning. You can order it on Amazon here and it lasts forever (we have had ours for six months and barely put a dint in it).

This recipe uses a little smidge of butter. You can add more if you want a more robust butter flavor but it does not take much when used with the Flavacol.

2 tbsp. coconut oil (refined medium heat oil)

½ tsp. popcorn seasoning (I recommend Flavacol), plus some to sprinkle 

½ cup popcorn kernels

2 tbsp. fresh rosemary

½ Tbsp. melted butter

½ cup shaved parmesan

Heat the coconut oil and seasoning in the popcorn maker until the coconut oil is melted. Add the kernels and rosemary and stir by turning the handle. Turn the handle intermittently. Once you hear the popping speed up, turn the handle constantly and quickly to make sure the kernels are all being popped. Listen for a slow down in popping and move the maker off of the heat. Keep stirring until the popping stops. Open the maker and add the melted butter and cheese. Close the top quickly and stir/shake the maker vigorously until the cheese melted and coats the popcorn. Sprinkle with additional seasoning if desired. Serve immediately.
